Avocado Tuna Melt

Avocado Tuna Melt - creamy avocado pesto with tuna makes for a quick grilled cheese that's not just delicious but healthier too!

I am typing this post while waiting for my connecting flight. It’s my second time at Qatar airport and I must say it’s amazing what they have done to this airport. Last time when I had a layover at this airport, I remember sitting in a very crowded space but this time it’s like a totally new place. Huge duty free shops, fancy restaurants servings food worthy of Michelin star chefs, luxury lounges, hotels & spas inside the restaurant and so much more!

I found this pretty cafe where I ordered a lentil falafel wrap and it was so delicious. Now enjoying my earl grey tea and trying to get some work done. Even though it’s so hard to get any work done as the excitement of reaching home soon is way too much.

Last time I created these fun sushi rolls using Bumble Bee® Solid White Albacore which were super quick to make and easy for back to school snacks or lunches. When I was again given an opportunity, I knew what I wanted to create. A super easy yet fun after school dinner recipe that involves every kids favorite cheese and filling of healthy tuna and avocado. Avocado pesto gives this grilled cheese tons of flavor while also keeping it heart healthy and is there a kid who doesn’t enjoy grilled cheese?!

Serves: 3 grilled cheese sandwiches
Ingredients
grilled cheese:
  • 1 can Bumble Bee® Solid White Albacore
  • 1 avocado
  • 2-4 tbsp good quality pesto
  • Sliced cheddar cheese
  • Butter for bread
  • 4-6 bread slices
Instructions
grilled cheese:
  1. In a bowl mix pieces of albacore, pieces of avocado, pesto and mix. Taste and adjust pesto as per taste.
  2. Spread butter on both sides of bread slices. Place one cheese slice on all bread slices. Add the mixture of avocado tuna melt on 3 bread slices and then cover with the other bread slice with cheese. Place this on a hot skillet and cook until golden brown , flip and cook the same on the other side as well.
  3. Serve immediately.
