Loaded Veggie Pizza Toast is a quick and easy meal idea for those busy week nights. Packed with all sorts of veggies, it will be a crowd pleaser for sure!

Can I tell you how much I have been missing home lately?? With all the traveling, I kind of want to stay at home and get in a routine like normal people. You know routine where you get ready in the morning, work till wee hours and see your friends on weekends. I have been missing company of people my age! Doing all those crazy fun things with friends, laughing at each other’s stupidity and leaving no chance at making fun of your besties!! Now you know what I am talking about!! It’s still summer in Florida so it’s kind of hard to feel fall coming but I will be on my way home to Texas soon and I can’t wait. Today’s recipe is a special one. This recipe comes from Jerry’s mom who is an amazing cook. Even though she underwent a surgery, her love for feeding people is hard to stop. I whipped up these super delicious veggie toasts under her crazy supervision. I like to tease her calling her crazy as she is kind of super particular about certain things. Things like everything being in its certain exact place, everything being over the top clean and lots of other crazy stuff which sometimes drives me nuts but Mom, I love you so I won’t stop teasing you!

Back to these delicious toasts. I find them a very good meal idea to be served for dinner when super short on time or just wanting to spice up things for dinner! With good serving of freshly chopped vegetables, these are a super healthy option as well. Not to mention that picky eaters won’t even mind eating these. Ronak loves eating them and he doesn’t really care about the tons of hidden veggies inside(say, zucchini, bell peppers, onion, broccoli). Mixed with little cheese and mayo, these are perfect for dinner or serving as appetizers during football matches!

I loved them so much that I ate them 4 times in two days. I know I have this tendency of overdoing everything.But I am telling you, these are delicious. Even I was not sure how they would taste looking at all the veggies but seriously you can’t tell that they are so good for you. They taste super indulging.

Loaded Veggie Pizza Toast

Quick & easy meal idea for those busy weeknights! Loaded with all sort of veggies, even pickiest eaters will love these!

Ingredients
  • ½ red bell pepper, chopped very fine

  • ½ yellow bell pepper, chopped very fine
  • ½ yellow bell pepper, chopped very fine
  • ½ green bell pepper, chopped very fine

  • 1 medium sized sweet onion, chopped very fine

  • 1 medium size zucchini, chopped very fine

  • 7-8 broccoli florets, chopped very fine

  • 2-3 garlic cloves, chopped fine

  • 1 jalapeno or as per your taste, chopped fine

  • small bunch of cilantro, chopped fine

  • 2-4 ounce shredded cheese or as per taste(I used a mix of cheddar and monterey jack cheese)

  • 1 loaf of fresh french bread
  • 1 loaf of fresh french bread
  • 3-4 tbsp mayonnaise or as per taste

  • Salt and black pepper to taste
Instructions
  1. Preheat oven to 350F. Cut  slices of french bread or for your sanity, just buy the pre cut one. Spread little butter on one side and Lay them on a baking sheet. Toast in the oven for few minutes until they get slightly crisp. Make sure you don't crisp them too much as we will again bake them after adding veggies and too crispy toast gets too dry to eat. Once little crispy, take them out.
  2. In a bowl, add all the ingredients and mix so they get coated nicely with the veggies. Taste and adjust salt, black pepper, mayo or cheese as per taste.
  3. Add 2-3 spoonfuls of the veggie mix on each toast. At this point, if you want extra cheesy, you can sprinkle some more shredded cheese on top. Bake for another 10-12 minutes or until cheese starts to melt. Serve immediately.
Notes
Enjoy these with chilled beer, wine or soda.

    Oh yum, what a great idea mixing a salsa/bruschetta type of thing with CHEESE. You can’t go wrong with cheese 🙂 I like that though it’s a quick snack/meal there are veggies in there.
