Super simple, packed with tons of good for you ingredients, My Family’s Favorite Energy Balls never last more than a few days at our home.

It’s been one super full season in my life but I am grateful for this phase of my life with all it’s pros & cons. Lately my first priority being my family with a tiny 16 month old baby girl, it’s been sort of hard to get back to work fulltime or in all honesty even partially but I am trying.

So decided to kick of holiday season with something healthy which my family loves. It’s all three of ours (yes!) (  my husband, even our 16 month old’s and my favorite recipe) . These energy balls have all sorts of good for you ingredients but taste delicious unlike some healthy energy balls which we eat just because they are healthy but don’t really enjoy.

These are no bake, comes together in 30 ish minutes and stay great stored in fridge for a good amount of time! A great snack to keep on hand at all times.

Ingredients
  • Dry Mix:
  • Hemp hearts 1 cup (4.8 oz / 136 gms)
  • Almonds ½ cup (2.6 oz / 74 gm)
  • Flaxseed meal (grinded up flaxseeds) 4 Tbsp (10 oz / 28 gm)
  • Walnuts ½ cup (1.9 oz / 54 gm)
  • Pumpkin seeds ½ cup (2.7 oz / 79 gm)
  • Roasted coconut chips ½ cup (1.1 oz / 31 gm) (I got these from Trader Joes) ( or use unsweetened shredded coconut)
  • Wet mix:
  • 20-22 medjool dates
  • Coconut oil 4 Tbsp
  • 1 Tsp cinnamon powder
  • 4 Tbsp hot water (optional)
  • Additional:
  • 2 Tbsp oats
  • 2 Tbsp poppy seeds
Instructions
  1. Pulse all dry ingredients in a blender until coarse. Take the dry mix out in a big bowl.
  2. Add wet ingredients in the blender and blend until you get a smooth puree. If you don't have a high speed blender like blendtec or vitamix or if you feel it's not turning into smooth puree easily, add some hot water 1 tbsp as you blend. I blended in my blendtec but still had to add 4 Tbsp hot water.
  3. Add this wet mix to dry mix and stir until evenly mixed. It might take few minutes and sometimes I even like going in there with my hands for even mixing. Add oats and poppy seeds and give another mix.
  4. Now you can roll these energy balls into balls as I did or place the batter into a parchment paper lined pan and let it chill in fridge. Then cut them into bars and store.
  5. Store these energy balls or bars in airtight container in fridge.
