Healthy Brown Lentil Soup

Ingredients
  • Brown lentils, ½ cup dry, rinsed and cleaned
  • Olive oil, ½ tsp
  • garlic, 6 cloves
  • green chillies, 1-2 chopped
  • Onion, 1 chopped in big chunks
  • Carrot, 1 chopped
  • Tomatoes, 2 chopped
  • Bay leaf, 1-2
  • Water, 3-4 cups
  • Salt to taste
  • Black pepper to taste
  • Lemon juice to taste
  • Cilantro, freshly chopped
Instructions
  1. In a big pot, add oil. Once hot, add garlic and green chillies and saute for few minutes until fragrant. Add onions, carrots and saute for 3-5 minutes. Add tomatoes, water, bay leaf, salt, lentils and bring it to a roaring boil. Let it simmer for almost 30 minutes. Blend it to get a smooth puree. Taste and adjust salt, black pepper and lemon. Serve hot garnished with freshly chopped cilantro.
