Spicy Schezwan Chow mein Noodles

Ingredients
Prepping noodles -
  • 3 packets of ramen noodles, any flavor as all we need is noodles not the seasoning!
  • Salt to taste
  • Black Pepper to taste
  • 1 tbsp sesame oil or olive oil or any good cooking oil
  • 2 tbsp schezwan sauce (homemade or store bought)
Vegetables for noodles -
  • 5-6 cups thinly sliced cabbage
  • ½ red bell pepper, thinly sliced
  • ½ yellow bell pepper, thinly sliced
  • **If you don't have colored bell peppers, then in place of red & yellow just use 1 green bell pepper!
  • 2 carrots, shredded (I have been using THIS (salad shooter) for shredding carrots & other vegetables for everything from gajar halwa, for quick stir fries and it takes just 2-3 minutes!)
  • 1 tbsp oil
  • 1 tbsp garlic paste
  • 1-2 tbsp vinegar or as per taste
  • Salt & black pepper as per taste
  • More schezwan sauce if you want
Instructions
Prepping noodles -
  1. First put water to boil for boiling noodles and while water comes to a boil, quickly chop your veggies. Boil ramen noodles just enough meaning don't overcook or they will get soggy. While water boils and noodles, get a baking tray. Once noodles are cooked which takes about 3-5 minutes, rinse them in strainer under cold running water for few minutes so they stop cooking immediately. Transfer them to a baking tray and add some oil, schezwan sauce, salt and pepper and toss them using your hands so noodles are evenly coated with the sauce.
Vegetables for noodles -
  1. Place a non stick pan over high heat and add oil. To it add garlic paste and all the chopped vegetables. Just stir it for few minutes just so the vegetables are cooked enough. You want to retain the crunch. It will take somewhere around 5-7 minutes for the vegetables to be cooked. Then add sauce coated noodles, salt, pepper, some vinegar and more schezwan sauce if noodled. Toss everything quickly and enjoy!
