Apple Pie Chimichangas

Serves: 10 Chimichangas
  • Filling
  • 1 cup sugar
  • ½ cup brown sugar
  • 4 tbsp all purpose flour
  • 2 tbsp fresh lemon juice
  • 4 tsp grated lemon peel
  • ¼ tsp ground nutmeg or in place you can use 1 tsp apple pie spice
  • 2 - 3 tsp cinnamon powder
  • I used 4 huge apples, peeled, quartered, cored and chopped
  • 10 Flour Tortillas, burrito size
  • Butter for cooking
  • Smucker's Salted Caramel Topping
  1. For filling
  2. Mix first 7 ingredients in a large bowl. Add apples and toss to combine.
  3. Pulse half of this apple spice mix in a food processor until you have a coarse puree. Keep it aside.
  4. Assembly :
  5. Spoon 1-2 tbsp of coarse apple pie puree in the center of it and top it with 1-2 tbsp of whole apple pie filling. Then as you can see in pictures, close it tightly and repeat with the remaining.
  6. Now melt some butter in a pan and cook these few at a time on low-medium heat until golden and crispy. Flip and repeat.
  7. Serve immediately drizzled with caramel sauce!
